GG’s Lunch Today


GG's lunch 6-9-14I was starving by the time my 1 pm Barre class ended so I needed to make a lunch that would take no more than 2 minutes to put together. I toasted a half of a small whole wheat bagel and cut a piece of salmon about the size of a business card (because it was very thick). I didn’t even bother microwaving the salmon or the green beans that I threw on top. I was too hungry. I stole the green beans idea from the Nordstrom’s cafe. It’s such a nice change from the typical lettuce or spinach added to sandwiches. (Plus I didn’t have to wash the beans like I would have had to do if I had used lettuce.) The green beans were left-overs from my Saturday night dinner party; they were already steamed but still had a nice “snap” to them. Same goes for the salmon (make a lot so there’s leftovers for salads, sandwiches, etc.) The honeydew and blueberries are so good together….mmm mmm mmm. That’s it. Easy breezy and seriously delicious!
